Another delicious way to use mushrooms is in a mushroom risotto. This creamy dish is made by sautéing mushrooms in butter, then adding in arborio rice and stirring in a mixture of chicken or vegetable broth and white wine. As the rice cooks, it will absorb the liquids and become creamy and delicious. Add in some grated Parmesan cheese and parsley for added flavor.
Mushrooms also make a great filling for a vegetarian quiche. Simply sauté sliced mushrooms with onion and garlic, then add in chopped spinach and a mixture of eggs and cream. Season with salt and pepper and bake in a preheated oven. This quiche is perfect for a brunch or lunch dish.
