I am in need of a recipe to make andouillette, I have always enjoyed chitterlings, and the sausage I enjoyed in France recently was fantastic.

Where are you from ?(it is not so common that non French persons love andouillette : even many French do not like them !).

Well, my opinion is that if you are not a profesional "charcutier" (delicatessen pork butcher) having access to profesional equipment to get and fill in guts/casing, forget it : this is not a cook business.
Traditional spices for "andouillettes de Troyes" are shallots, parsley, black pepper and nutmeg. You can also prefer to use, instead of the above, bouquet garni (parsley, thyme, laurel), clove, 4-spices, nutneg, parsley, onions, grey papper

juel, wow a step by step method would take a lot of time and typing on my part. I would suggest that you acquire a copy of Jane Grigson's book "The Art of Making Sausages, Pates, and other Charcuteie. You will find many other fine sausages to make. I made andouillette for my son-in-laws parents, from Chanos, and recieved very positive comments. I got my book from Amazon at a very reasonable price. Good luck
