Tabbouleh is far more than a simple salad: it's an Eastern culinary philosophy that celebrates freshness and simplicity. Originating from the Levant, particularly Lebanon and Palestine, this ancient preparation embodies the very essence of Mediterranean and Middle Eastern cuisine. Its name comes from the Arabic verb "tabal" which means "to season," and that's precisely what it does with elegance: it transforms basic ingredients into a symphony of flavours.

What fascinates about tabbouleh is its apparent minimalism. At first glance, one might mistake it for a simple parsley salad garnished with a few vegetables. But those fortunate enough to taste authentic Lebanese tabbouleh know it's a delicate harmony between fresh parsley (and yes, plenty of parsley!), juicy tomato, delicate onion, and that magical touch of fresh lemon. The bulgur, these small grains of partially cooked cracked wheat, plays the role of a discreet binder without ever stealing the spotlight from the herbs.
