  • 8.75 oz (250 g) fatback
  • 2 slices of ham 1 cm thick
  • 2 eggs
  • 1 onion
  • 2 shallots
  • pistachios and trumpet mushrooms (quantity to your preference)

  • 1.1 cups (25 cl) fresh cream
  • 0.4 cup (10 cl) white wine
  • 10 cloves
  • 15 juniper berries
  • a few grated nutmeg
  • 1 sprig of thyme
  • 4 sage leaves
  • 2 bay leaves
  • 3.2 cups (75 cl) aspic
  • 3 gelatin sheets.
