Limoux wine is produced in the Languedoc-Roussillon region of France. It holds the distinction of being France's oldest sparkling wine, with production dating back to the Middle Ages.
The vineyards of Limoux are cultivated on clay-limestone soils, and the principal grape varieties used in production are Mauzac, Chardonnay, and Chenin. The wine is made from grapes harvested at optimal ripeness and undergoes bottle fermentation, which imparts its characteristic effervescence.
Limoux wine is recognized for its finesse and complexity, offering aromas of stone fruits such as apple and pear, along with notes of brioche and yeast. It is further distinguished by well-balanced acidity and fine bubbles.

Several styles of Limoux wine exist, including Crémant de Limoux, a sparkling wine produced according to Champagne's traditional methods, and Blanquette de Limoux, a sparkling wine produced exclusively from Mauzac grapes.
