Sainte-Foy is a wine produced in the Bordeaux region of France, specifically in the communes of Sainte-Foy-la-Grande and Sainte-Foy-Bordeaux, situated east of Bordeaux. The wine is primarily made from Merlot and Cabernet Franc, with occasional additions of Malbec, Cabernet Sauvignon, and Petit Verdot. Sainte-Foy is distinguished by its fruity character and supple palate. The wine displays aromas of blackcurrant, cherry, and blackberry, with secondary notes of liquorice and dark chocolate. Oak aging in barrel imparts additional layers of vanilla and caramel. The Sainte-Foy region is characterized by clay-limestone soils and warm, dry conditions that favour optimal grape ripeness. Vines are cultivated using traditional methods with deliberately restrained yields, a practice that contributes to superior wine quality. Sainte-Foy should be served at 16 to 18 degrees Celsius and pairs well with red meats, sauce-based dishes, and cheese. It is equally suited to aperitif service or as a concluding glass.
