Sautéed Soy Sprouts and Wild Mushrooms
  • Poultry, veal, rabbit meat, and crayfish have always gone well together, here is an example.
  • Chicken rolls with crayfish for 4 people:
  • 24 live crayfish (red legs if you can find them, which is quite rare)
  • Nantua Sauce*
  • 1.75 oz (50 g) of mirepoix (small cubes) of carrots
  • 1.75 oz (50 g) of mirepoix of onions
  • a little lemon thyme flowers
  • 0.8 cup (20 cl) of white wine
  • 1.7 cups (40 cl) of prepared fish stock (or the cooking liquid from the crayfish)
  • 3 tablespoons of good organic tomato paste
  • 1 blanched tomato cut into quarters
  • a dash of cognac
  • 0.4 cup (10 cl) of 30% liquid cream
  • salt and Cayenne pepper
  • 12 strips of free-range chicken with the small nerve removed, seasoned and rolled on a small skewer
  • 7 oz (200 g) of fresh organic soy sprouts
  • 3.5 oz (100 g) of wild mushrooms (chanterelles, mousserons or others)
  • olive oil, butter
  • salt, freshly ground pepper and soy sauce
  • Cooking the crayfish
  • 1 carrot diced, 1 onion diced, 1 clove of garlic deveined and crushed, a little leek or green onion tops, lemon thyme, bay leaf, salt and Cayenne pepper.
