Recipe: Black Pudding with Apples and Carrots
Step-by-step directions
1 Peel the carrots, then cook them in salted water.
2/ Once cooked, drain them and blend with cream and eggs then season
3/ Peel the apples and cut them into fairly thin slices, then sauté for 2 minutes on each side in a pan
4/ Remove the skin from the black pudding, cut fairly thick slices and also cook them for 2 minutes on each side in a pan
4/ In each ramekin place a layer of carrot cream, 1 slice of black pudding about 1 good cm, then a layer of apple slices
5/ Place in a preheated oven at 355°F (180°C) and cook in a water bath for approximately 30 minutes.
Turn over and serve immediately.
