Ingredients for 6 servings
- 300 g (10.5 oz) black pudding
- 3 apples
- 2 eggs
- 30 cl (1.25 cups) liquid cream
- 4 medium carrots
- 2 eggs
1 Peel the carrots, then cook them in salted water.
2/ Once cooked, drain them and blend with cream and eggs then season
3/ Peel the apples and cut them into fairly thin slices, then sauté for 2 minutes on each side in a pan
4/ Remove the skin from the black pudding, cut fairly thick slices and also cook them for 2 minutes on each side in a pan
4/ In each ramekin place a layer of carrot cream, 1 slice of black pudding about 1 good cm, then a layer of apple slices
5/ Place in a preheated oven at 180°C (355°F) and cook in a water bath for approximately 30 minutes.
Turn over and serve immediately.
