Ingredients for 4 servings

Flat omelette for 4 people:
  • 4 blini pans (teflon or other)
  • 6 farm eggs
  • 500 g (17.75 oz) of new red onions peeled down to the 3rd layer then thinly sliced
  • 80 g (2.8 oz) of thin slices of Bayonne ham cut into fine strips
  • 5 cl (1.7 fl oz) of sweet white wine (jurançon)
  • olive oil (or a little duck fat)
  • salt, freshly ground pepper, nutmeg
  • a few drops of balsamic cream
