  1. Cottage pie 'parmentier' (*) with duck, foie gras and black truffles, for 8 servings :

For the mashed potatoes :

  1. 2.6 lb (1.2 kg) (2.5 pounds) peeled potatoes
  2. 100 grams (1/4 pound) butter
  3. 2/10.5 qt (10 liter) (1 cup) milk

Coarse salt, black pepper and a pinch of nutmeg

  1. 30 grams of fresh or canned black truffles

For the stuffing :

  1. 8 duck legs confit (remove skin and bones)
  2. 2 very thinly chopped shallots
  3. 1/4.25 qt (4 liter) (1 large cup) of veal stock
  4. 1/10.5 qt (10 liter) of red Port
  5. 300 grams (2/3 pound) of cooked foie gras

Table salt and freshly ground black pepperA little thyme flower

  1. 80 grams (0.2 pound) of breadcrumbs blended with 40 grams (0.1 pound) cepe mushroom (or other mushroom) powder
