  • Pot-au-Feu recipe for 8 guests:
Meat:
  • 1 kg (2.2 lb) of spare ribs, cut in 4
  • 1,5 kg (3.25 lb) of beef shoulder palette
  • 1,5 kg (3.25 lb) of beef shin
  • 8 marrow bones, cut into 5 cm slices
Vegetables:
  • 1 kg (2.2 lb) of carrots
  • 400 gr (14 oz) of turnips, or even better: some rutabagas
  • 300 gr (10.5 oz) of panais *
  • 1 kg (2.2 lb) of leeks
  • 1 onion, spiked with 3 cloves
  • 1 bouquet garni
  • 1 celery branch
Seasoning:
  • 4 sugar cubes
coarse saltroughly crushed pepper
  • 5 gr (0.2 oz) of powdered gniger or 30 gr (1.1 oz) of fresh grated ginger root
Garnish:high grade sea salt,violet mustard,
  • 1 jar of horseradish
