  • 1 dozen scallops
  • 4 or 5 shallots (depending on size) finely sliced
  • 0.6 cup (150 ml) dry white wine (Gros Plant or Muscadet)
  • 1 tablespoon coriander seeds crushed in a mortar
  • 3.5 oz (100 g) excellent quality butter
  • fleur de sel, white pepper
  • a few sprigs of flat parsley or chervil
