  • 1 diced onion
  • a little thyme, 1 bay leaf, 1 garlic clove degermed and crushed and a small celery branch.
  • marinade to prepare the day before
  • 0.6 cup (15 cl) white wine (Corsican)
  • juice of 1 lemon
  • juice of 1 orange
  • maquis honey (2.6 oz (75 g))
  • 4 shallots thinly sliced
  • salt and freshly ground pepper
