Ingredients for 4 servings
- a veal roast of 1kg (fillet)
- 1 veal bone
- 1 diced onion
- a little thyme, 1 bay leaf, 1 garlic clove degermed and crushed and a small celery branch.
- marinade to prepare the day before
- 15 cl white wine (Corsican)
- juice of 1 lemon
- juice of 1 orange
- maquis honey (75 g)
- 4 shallots thinly sliced
- salt and freshly ground pepper
