Saint-Aubin Saint-Aubin wine is produced in the Côte de Beaune wine region of Burgundy, France. It originates from vineyards situated on the slopes of the commune of Saint-Aubin, located between Chassagne-Montrachet and Puligny-Montrachet. Saint-Aubin wine is produced primarily from Chardonnay, though other varieties such as Pinot Noir, Gamay, and Aligoté are also cultivated. The white wines of Saint-Aubin are regarded as superior quality wines, displaying aromas of apple, pear, and hazelnut. The red wines are equally appreciated for their aromatic complexity, with notes of cherry and blackcurrant. Saint-Aubin wine is often considered a secondary appellation when compared to the prestigious wines of Chassagne-Montrachet and Puligny-Montrachet. Nevertheless, Saint-Aubin wines have established their own reputation by offering excellent value for money. Saint-Aubin wines are generally consumed young, though certain white wines benefit from aging to develop more complex aromas. They pair particularly well with fish, shellfish, and poultry dishes, as well as soft-paste cheeses.
