Chichis are choux pastry fried in oil using a ridged dispenser. Four to five minutes in hot oil, and out comes golden, crispy fritters. Those ridges aren't decorative: they reduce pressure during frying and prevent explosions. Roll in crystal sugar while still warm. That's it.
