  • 250 g (8.75 oz) of firm mirabelle plums cut in half and pitted
  • 350 g (12.25 oz) of bright green snow peas
  • 8 new onions peeled keeping a bit of green
Gastrique:
  • 8 cl (0.3 cup) of balsamic vinegar
  • 4 sugar cubes 5 cl (1.7 fl oz) of orange juice (optional)
  • 50 g (1.75 oz) of butter
  • a drizzle of peanut or grape seed oil
  • salt pepper from the mill 1 bay leaf and thyme flowers
