Sweetbreads are lamb testicles, blanched 4 minutes in boiling water to remove membranes. Coated in flour, egg, then breadcrumbs mixed with parmesan and dried porcini powder. Cook 6 minutes per side in butter and oil. Side dish: small porcini mushroom buttons sautéed in the pan. Reduced meat stock with garlic to finish.
Ingredients for 4 servings
- 8 small sweetbreads or cleaned white kidneys
- 1.75 oz (50 g) sifted flour
- 2 whole eggs beaten with a splash of sunflower oil
- 2.8 oz (80 g) equal parts breadcrumbs and freshly grated parmesan mixed + a little dried porcini powder
- 8.75 oz (250 g) small porcini mushrooms "buttons" (if possible)
- 0.8 cup (20 cl) reduced meat stock
- 1 garlic clove, de-germed and reduced to a purée
- 3.5 oz (100 g) fine butter and sunflower oil
- salt and freshly ground pepper
