  • 3 egg yolks
  • 1.1 oz (30 g) of grated Parmesan
  • 3.5 oz (100 g) of semolina
Finishing:
  • 2.1 oz (60 g) of clarified butter* or melted
  • 2.1 oz (60 g) of grated Parmesan
"Clamart" Garnish:
  • 1.25 cups (30 cl) of liquid cream 30%
  • 2.1 oz (60 g) of fresh or frozen peas
  • salt, Cayenne pepper and nutmeg zest
