Not difficult to make. Plan ahead the day before.Lamb and bean stew for 6 people:
  • 1.5 kg (3.25 lb) of lamb (shoulder) and if you're not broke, nothing stops you from taking leg of lamb.
  • 1 whole garlic clove if it's fresh (a little less if it's dried).
  • 3 beautiful tomatoes.
  • 1 beautiful carrot (or 2 small ones).
  • 5 large onions.
  • 500 g (17.75 oz) of white beans (lingots if you find them or Tarbais if you break your piggy bank).
  • 2 celery branches.
  • 2 cloves.
  • 1 chili pepper.
  • 10 bay leaves.
  • 1 tsp of dried thyme or a few branches of fresh thyme.
  • 1 tbsp of baking soda.
  • Salt and Cayenne pepper.
  • 150 g (5.25 oz) of salted bacon lardons.
  • 75 g (2.6 oz) of salted butter.
  • A few spoonfuls of high quality olive oil (Italian ones are well fruity).
  • 1 dozen black olives
  • 1 dozen small pearl onions
