- 2 beautiful slices of bone ham with fat trimmed and cut in half
- 4 "carmine" endives wiped, cut in half with the heart removed
- hazelnut oil
- Sherry vinegar
- a few grains of salt (Noirmoutier)
- A good grind of the pepper mill
