  • 250g (8.75 oz) dark 60%+ chocolate, broken into small pieces
  • 200g (7 oz) cater sugar
  • 200g (7 oz) butter
  • 4 eggs, separated
  • 1 large meringue
  • 1/2 Litre (2.1 qt) of anglaise sauce or French custard
  • 5g (0.2 oz) of darjeeling or yunnan tea
