Ingredients for 4 servings
- Fried egg with asparagus and pancetta for 4 people:
- 4 beautiful fresh eggs
- 14 oz (400 g) purple asparagus tips
- 3.5 oz (100 g) fresh butter
- 3.5 oz (100 g) pancetta slices thinly cut and shredded
- hazelnut oil
- a few drops of balsamic vinegar cream (truffle if you can)
- salt and freshly ground white pepper
