  1. Fried egg with asparagus and pancetta for 4 people:
  2. 4 beautiful fresh eggs
  3. 14 oz (400 g) purple asparagus tips
  4. 3.5 oz (100 g) fresh butter
  5. 3.5 oz (100 g) pancetta slices thinly cut and shredded
  6. hazelnut oil
  7. a few drops of balsamic vinegar cream (truffle if you can)
  8. salt and freshly ground white pepper
