Step-by-step directions
1 mince the onions and sweat them in a little butter.
2/ add the crab, tomato, cream, saffron, salt and pepper.
3/ once the mixture is well homogeneous make an omelet in another pan having beaten the eggs in a bowl with a little milk, salt and pepper.
4/ to finish: put the crab mixture on the omelet and fold it to serve.
with a salad this dish makes a complete meal.

Excellent recipe, you can replace the crab with scallops cut into small dice.
