  • 1 bunch of very young Swiss chard* (about fifteen cm tall with fine ribs of 2 to 3 cm)
  • thyme (lemon thyme if possible)
  • 1.1 cups (25 cl) of liquid cream (30%)
  • 2.5 oz (70 g) of freshly grated Parmesan
  • 1.75 oz (50 g) of Pancetta sliced and sautéed for 1 minute
  • salt pepper and nutmeg
