Ingredients for 4 servings
- 1 medium pattypan squash
- 1 onion, peeled and finely sliced
- 1 medium zucchini, sliced
- 60 g (2.1 oz) smoked bacon, cut into small lardons
- olive oil
- salt and freshly ground pepper
- 1 garlic clove, germ removed and chopped
1 Peel the pattypan squash and cut it into small 1 cm cubes.
2 Pan-fry your vegetables with a little olive oil. After 5 minutes of cooking, add the smoked bacon.
3 Cook on low heat for 10 to 12 minutes, testing regularly to achieve the desired doneness. Add the chopped garlic and adjust the seasoning (be careful not to add too much salt due to the smoked bacon). Simple to make, yet absolutely delicious.
Excellent recipe from Ivan, aka "the Terrible". You can also peel your pattypan squash (500 g of flesh) with 1 potato cut the same way, cut into large chunks, moisten with 1/2 liter of milk, salt and pepper, cook for 20 minutes, then drain and pass through a food mill. Beat over the heat with 30 g of butter, 1/2 teaspoon of salt and put into small dishes. Top with grated Parmesan and place under the broiler for 5 minutes. Pure delight.
