Recipe: Quick mashed potatoes with three cheeses
Step-by-step directions
1 Wash and peel the potatoes, cut them into 4 pieces and cook them, starting in cold salted water, for 20 minutes.
2 Meanwhile, remove the rinds from the Comté and Gorgonzola, and cut them into cubes of approximately 1 cm on each side.
3 When the potatoes are cooked, drain them and reduce them to a purée.
4 Add the cheese cubes, the Kiri and the thick cream.
5 Mix well, season with salt and pepper, add a pinch of nutmeg, mix again.
6 Serve very hot after molding and sprinkling with black mustard seeds.
** You can reserve a few cubes of Gorgonzola and Comté, present them separately, mixed with the very hot purée, they will melt in your mouth.
** You can replace the cream with 3.5 oz (100 g) of butter.
