1 Start by preheating your oven to a low temperature, around 110 degrees Celsius (thermostat 4).
2 Rinse your cherry tomatoes and dry them, place them in a bowl, drizzle with olive oil, and add a pinch of salt, pepper, and sugar.
3 Mix everything together and spread them on a baking sheet, then place in the oven for 1 hour.
4 Once ready, let them cool completely.
5 Cut the phyllo dough into rectangles of 5 by 12 cm (depending on the size of your tomatoes).
6 Quickly brush them with olive oil and wrap the cherry tomatoes to give them a sweet candy-like appearance.
7 Place them on a baking tray and put directly in the oven at thermostat 6 or 7 (190° to 390°F (200°C)) until they are golden and crispy.
8 Serve with salsa or tzatziki accompanied by a glass of Chablis.
This is a basic recipe. For more flavor, tuck a sprig of rosemary and a garlic clove into each tomato. Chablis doesn't pair well with tomato, so opt instead for a white wine from the South like Châteauneuf-du-Pape or similar.
