The 'Madeleine' story
Stanislas, king of Poland used to have, as a second home, the castle of Commercy, in a small town of the Lorraine region (east part of France).
One day, in the year of grace 1755, he received, as guests, the great Voltaire and Madame du Châtelet, both known to him to have a sweet tooth. For this event, he ordered to his cook, a woman called Madeleine, to create a brand new sweet.
She then proposed to the king's guests small cakes with a fat belly who were declared to be excellent beccause, among other reasons, of their delicate bergamot orange flavour.
King Stanislas aprreciated them so much that he sent a parcel full of them to the king of France, Louis XV, in Versailles.
The cake became so successful that it was decided to call it "Cake of the Queen" but the queen prefered to call it "Madeleine", from the name of the one who invented this today famous cake.
And this is why the name of a modest cook of a noble house became famous for ever.

La madeleine vient de St-Yrieix en Limousin. Sa création dans cette région remonte au début des pélerinages à St Jacques de Compostelle. Une jeune fille nommée Madeleine proposait des gâteaux cuient dans des coquilles St Jacques en l'honneur des pelerin. Cette création est beaucoup plus ancienne, et ce sont les pelerins lorrains qui l'ont amenée en lorraine et l'on reproduite.

conscious" writing. They are similar in look to yours, but have a more fluted body, thanks to a special pan used in their baking.
On connaît un peu comment sont arrivées les madeleines a Dax
a l'époque les religieux traversaient la France et a chaque étapes dans les villes de grandes"foires" ils vantaient et vendaient les produits issus de leurs régions
On pense que cet un arrêt d'un de ces religieux lorrain dans une féria a Dax qui donna a un pâtissier l'idée de la refaire
mais ne voulant pas la refaire de même il en changea la structure
molle comme la lorraine et croutée sur le dessus

Voici celle que j'ai toujours connu moi petit lorrain ... :)
La madeleine de Commercy est due à une dispute entre le pâtissier et l'intendant du roi Stanislas Leszcynski en son château de Commercy. Lors d'un repas de fête, le pâtissier rendit son tablier en emportant avec lui le dessert préparé. Une soubrette dévouée sauva la situation. Elle confectionna une recette de gâteau à cuisson rapide héritée de sa grand-mère. Prénommée Madeleine, le roi, pour la féliciter et la remercier de lui avoir sauvé la mise devant ses invités, baptisa de son prénom le délicieux dessert.
