Ingredients for 6 servings
- 2 zucchinis (cut into spaghetti)
- 100 g of feta
- 15 fresh mint leaves
- 10 cl of whole milk
- 10 cl of olive oil
- 3 eggs
- 190 g of flour
- 1 packet of baking powder
- 3 pinches of Espelette pepper
- Salt, pepper
1/Wash the zucchinis. Cut them lengthwise very finely like spaghetti. Salt and pepper. Cut the feta into cubes and chop the mint.
2/In a bowl beat the eggs, oil and milk then incorporate the flour and baking powder. Mix well. Season to your taste. Add the zucchini spaghetti, chopped mint, feta cubes and Espelette pepper
3/Generously butter a loaf pan and pour the preparation obtained above then put in the oven for 40 minutes at 180°C
Serve hot or cold.
For an evening meal or a picnic.
Accompanied by a green salad, tomatoes and small white onions in vinegar.
