Ingredients
- 1 glass of sifted flour for 1 glass of salted water (for the salt, it all depends on the size of the glass and your diet!)
- frying oil
- crystallized sugar
1- bring the water to a boil, add the salt (avoid putting the salt in cold water if your pans are stainless steel).
pour the boiling water all at once over the flour.
2- mix with a wooden spoon.
3- heat the frying oil.
use a chichis maker (sold at markets - mine was bought in Vendée 20 years ago!, but also online).
as soon as the fritters are cooked (4 to 5 min), drain them and place on absorbent paper.
roll them in crystallized sugar.

for the little story, and to avoid an accident: do not put a ball of dough to test the heat of your oil: it risks exploding and you being sprayed with boiling oil: my son had his forearms bandaged for 2 days. chichis are fluted fritters, with dense batter. now, we know why: the flutes reduce pressure during frying. there is no such thing as chance...
