Ingredients for 4 servings
- 250 g of type 45 flour.
- 250 g of extra-fine semolina.
- 2 packets of baking powder
- 1 tablespoon of sugar.
- 1 teaspoon of salt.
- warm mineral water.
- oil for shaping and frying.

Combine all ingredients in the bowl of a food processor
or a large mixing bowl, being careful not to mix
the salt and baking powder directly. Knead by adding water little by little.
For kneading by hand, allow 15 minutes by adding a few
teaspoons of water as you go (with a processor, allow 5 minutes).
When the dough is soft, slightly sticky, cover it
with a cloth and let it rest for 45 minutes.
2- When the dough has doubled in volume, divide it
into balls the size of a mandarin.

Using oil to help, spread a ball on the work surface
to a thickness of about half a centimeter.

Fold each side toward the center,
leaving a space in the middle. Repeat the operation with
each small piece of dough until finished.

Place each donut on a large oiled plate
and space them apart. Let rest for 20 minutes again,
covered with a cloth.

Then plunge each donut into a large bath of oil
over medium heat, turning halfway through cooking. Place the ftayer
on a plate covered with absorbent paper.
Enjoy as is or sprinkle with either sugar or hot honey.
