1- In a bowl pour the flour, sugar and 3 whole eggs + 2 yolks.
2- Mix everything without lumps, then add the vanilla.
3- Melt the butter and add it to the batter, then beat the 2 remaining egg whites until stiff and fold into the batter which must be well blended.
4- Let it rest covered with a kitchen towel for 3 hours.
5- Heat your galette iron on the stove.
6- Once hot, place 1 tablespoon of batter in it and close.
7- Let cook for 1 to 2 minutes depending on desired browning.
8- Remove with the galette fork and place on the cooling rack and wait for them to cool, finally if you can wait lol.
my grandchildren add spread to them either speculoos or chocolate.
