1/ start by buttering both sides of the pastilla sheets with softened butter using a brush, then fry them one by one in hot oil and drain on absorbent paper.
2/ heat the milk with the sugar then thicken it with the starch (simply dissolve the starch in a glass with a little cold milk and incorporate it into the hot milk while stirring)
3/ let cool, add the flavoring and refrigerate.
4/ assemble the pastilla just before eating so it remains crispy. in a large round dish place 3 stacked pastilla sheets, drizzle with milk, honey, and a little almonds, repeat the operation until all sheets are used, finish with a sheet drizzled with honey and almonds, decorate with mint and as in Morocco everyone eats from the same dish...
