Ingredients for 4 servings
- 2 beautiful leeks
- liquid cream 30%
- 1 egg yolk
- nutmeg
- Freshly grated Parmesan
- salt, pepper
- olive oil
1- Sweat the white parts of well-washed leeks, cut into rounds, in olive oil for 5 minutes covered.
2- Salt, pepper then add a grating of nutmeg, and moisten with cream to cover.
3- Let cook 7 to 8 minutes then remove (drain) the leeks and spread them on a plate.
4- In the still hot cream, add while stirring with a whisk an egg yolk beaten with a little Parmesan then pour over the leeks.
5- Then pass under the oven broiler for 2 minutes.
