Ingredients for 6 servings
- 200 gr of medium couscous grains
- 2 chicken breasts
- 2 zucchini
- 2 tomatoes
- 1 red bell pepper
- 4 medium lemons
- 1 bunch of chives
- 1 can of corn
- 20 cl of olive oil
- salt and pepper.
Prepare the couscous grains as indicated on the package. Slice the chicken breasts thinly. Heat 2 tablespoons of olive oil in a pan, add the sliced meat to brown then continue cooking for 5 minutes over low heat while stirring. Salt, pepper and set aside. Wash the tomatoes, bell pepper and zucchini. Cut them into small dice. Drain and rinse the corn. Squeeze the lemons for juice.
Pour the couscous grains into a salad bowl. Incorporate the previous ingredients as well as the chopped chives. Drizzle with lemon juice and the remaining oil, then salt and pepper. Mix again and serve chilled.
