1 Preheat the oven to 355°F (180 °C).
2 In a small bowl, mix the honey, oil, soy sauce, mixed spices, minced garlic and pepper.
3 Place your quails in an ovenproof dish and brush them with the honey and spice mixture.
4 Pour a little water into the dish and turn on the oven grill to caramelize them, turning them over so they are nicely golden. Baste regularly. Cook for 40 to 45 minutes, depending on your oven.
5 Remove your quails from the oven. If needed, deglaze the cooking juices with a little water. There you have it, it's ready! Time to eat!
A lovely recipe. Personally, I roast them on each side before glazing them, and inside I slip small pieces of lemon or quince with the skin on.
