Ingredients for 4 servings
- 500 g (17.75 oz) of strawberries
- 1/2 lemon
- A few mint leaves
- A few grains of white pepper
- 1/2 vanilla pod
- 4 scoops of nougat ice cream
- 5 tablespoons of strawberry soup
1 Wash and hull the strawberries. Pat them dry gently and slice them to arrange in a fan on four serving plates. Drizzle with lemon juice as you go. Keep chilled.
2/ In a bowl mix: 5 tablespoons of strawberry soup, the pepper and the vanilla reduced to powder. Keep this sauce chilled.
3/ At serving time. Place 4 beautiful mint leaves in the center of each plate. Put the nougat ice cream scoop on the mint leaves. Pour the sauce over the carpaccio.

4 Serve with small lemon cakes. This very fresh dessert is a treat after a good meal.
