Strawberry Cake for 6 to 8 people:The sponge cake:
  • A sponge cake baked in a tall square mold (if possible)

The mousseline cream:For the "Pastry cream"
  • 1.1 cups (25 cl) of whole milk
  • 1.75 oz (50 g) of caster sugar
  • 3 egg yolks
  • 0.9 oz (25 g) of cornstarch
  • vanilla flavoring (vanilla bean or vanilla sugar)
  • Buttering
  • 4.25 oz (120 g) of fine butter
  • Strawberries
  • 28 oz (800 g) of tasty strawberries of medium size
  • 0.8 cup (20 cl) of strawberry syrup of good quality mixed with 1.4 fl oz (4 cl) of Kirsch (not mandatory)
  • Proposed decorations or almond paste or powdered sugar
