Ingredients for 4 servings
- 100 grams of chestnut puree
- 100 grams of dark chocolate 50%
- 50 grams of icing sugar
- 50 grams of butter in pomade
1 Melt the chocolate in a bain-marie as quickly as possible (barely warm)
2/ Add the chestnut puree (or whole chestnuts that have been ground in a food processor), the sugar and the butter.
Mix everything together to obtain a homogeneous mixture.
Let cool and use in a piping bag and top if you wish with a touch of whipped cream
