Calisson Cream
  • 0.8 cup (20 cl) of liquid cream,
  • 0.4 cup (10 cl) of milk,
  • 3 egg yolks,
  • 4 sage leaves,
  • 4.25 oz (120 g) of calisson paste which consists of:
  • 2.1 oz (60 g) of almond powder,
  • 1.75 oz (50 g) of candied melon,
  • 0.4 oz (10 g) of honey.
