Step-by-step directions
1 Mix the almonds and breadcrumbs.
Beat the eggs, pour the flour onto a plate.
Rinse the escalopes with cold water, dry them well.
2/ Salt and pepper, pass them through the flour then through the beaten eggs.
Then pass them through the almond mixture.
3/ Brown them in a pan with butter, 4 to 5 minutes per side, over medium heat.

Good recipe, a few remarks, why rinse the poultry flanks? When your escalopes are cooked pour lemon juice over them and serve for example with fresh spinach.
