- 2 beautiful wild turbots with fillets removed and skin taken off
- 1 bunch of watercress, leaves cut with 1 to 2 cm of stem, well cleaned
- 30 g of sesame seeds
- 1 shallot, minced
- 30 cl of liquid cream (30%)
- 80 g of half-salted butter
- canola oil
- salt, freshly ground pepper
- 1 pinch of Combava powder (from Madagascar preferably)
