How to do it on iPhone :
1. In Safari, tap the Share button (square with an up arrow, at the bottom of the screen).
2. Scroll down and tap "Add to Home Screen".
3. Tap Add at the top right.
8.75 oz (250 g) of fine sugar or brown sugar (muscovado).
5 whole eggs.
vanilla extract.
1 galette iron.
1 galette fork.
1 cooling rack.
spread (optional).Small variations:

I add instead of vanilla a few drops of bitter almond extract and 1.75 oz (50 g) of ground almonds. or
a few slices of jonagold apples (1 large apple.) or
chocolate chips that resist cooking.
Step-by-step directions
1 In a bowl pour the flour, sugar and 3 whole eggs + 2 yolks.
2 Mix everything without lumps, then add the vanilla.
3 Melt the butter and add it to the batter, then beat the 2 remaining egg whites until stiff and fold into the batter which must be well blended.
4 Let it rest covered with a kitchen towel for 3 hours.
5 Heat your galette iron on the stove.
6 Once hot, place 1 tablespoon of batter in it and close.
7 Let cook for 1 to 2 minutes depending on desired browning.
8 Remove with the galette fork and place on the cooling rack and wait for them to cool, finally if you can wait lol. my grandchildren add spread to them either speculoos or chocolate. enjoy.

Great recipe as always if you don't have galette irons make them in your panini makers as they often have interchangeable plates for waffles. Chef Patrick.
