  • 2 rolls of puff pastry, thick if possible homemade
For the almond cream:
  • 4.5 oz (130 g) almond powder
  • 3.5 oz (100 g) powdered sugar
  • 2 egg yolks
  • 2.5 oz (70 g) butter
  • 1 tbsp rum
For the pastry cream:
  • 6.25 oz (180 g) milk
  • 2 egg yolks
  • 1.4 oz (40 g) caster sugar
  • 0.5 oz (15 g) cornstarch (cornflour)
  • 2 packets of vanilla sugar or 1 vanilla pod split in half
  • 1 egg yolk for glazing and 2 tbsp milk
