  • 2 rolls of puff pastry, thick if possible homemade
For the almond cream:
  • 130 g (4.5 oz) almond powder
  • 100 g (3.5 oz) powdered sugar
  • 2 egg yolks
  • 70 g (2.5 oz) butter
  • 1 tbsp rum
For the pastry cream:
  • 180 g (6.25 oz) milk
  • 2 egg yolks
  • 40 g (1.4 oz) caster sugar
  • 15 g (0.5 oz) cornstarch (cornflour)
  • 2 packets of vanilla sugar or 1 vanilla pod split in half
  • 1 egg yolk for glazing and 2 tbsp milk
