Buckwheat pancakes are made from buckwheat flour, one egg, a splash of beer and water. Let the batter rest for at least one hour, then cook in a hot pan. Fill them as you like: egg, ham, cheese, or simply salted butter. This is Brittany on a plate, best enjoyed with farm cider.

For 12 buckwheat pancakes :
- 8.75 oz (250g) of Buckwheat flour
- 1 Egg
- 1 Teaspoon of salt
- 5 dl of water
- 2 Table spoon of vegetable oil or lard
- 1/2 dl of beer or water
