Apple-Orange Galettes fresh and flavorful
Ingredients for 6 servings
- 17.75 oz (500 g) of mashed potatoes (cooked and passed through a vegetable mill but without adding anything).
- 1 orange peeled to the quick with segments cut into small squares (skin and white removed then with a well-sharpened knife remove the slices)
- 3.5 oz (100 g) of butter (2 times 1.75 oz (50 g))
- 2 finely chopped shallots
- 2 egg yolks mixed with 1.1 oz (30 gr) of flour
- salt and ground pepper
Step-by-step recipe
1 Sweat the chopped shallots in a little butter for 2 minutes gently then add the orange segments, let cook for another 5 minutes and set aside in a small bowl.
2 In the warm mashed potato over the heat add your 1.75 oz (50 g) of butter, salt and pepper then mix in your flour and yolk mixture and stir well with a wooden spatula for 1 minute. then add the cooked orange segments, stir and spread everything on a flat baking sheet.
3 Wait for your mixture to be lukewarm and turn your oven to 200°(th7+).
4 Then make with your clean hands 12 equal balls and flatten them with your palm to make small galettes.
5 In an oven-safe dish melt 1.75 oz (50 gr) of butter, add your galettes, bake them then after about 10 minutes turn them over carefully using an iron spatula (palette) and put back in the oven for 10 minutes (they must be well browned).
6 Serve in a rosette pattern in a nice round dish to accompany your roast for example.
You can even try this side dish with langoustine tails just pan-fried or scallops on the plancha. guaranteed success!
