Ingredients for 6 servings
- 500 g (17.75 oz) of mashed potatoes (cooked and passed through a vegetable mill but without adding anything).
- 1 orange peeled to the quick with segments cut into small squares (skin and white removed then with a well-sharpened knife remove the slices)
- 100 g (3.5 oz) of butter (2 times 50 g (1.75 oz))
- 2 finely chopped shallots
- 2 egg yolks mixed with 30 gr (1.1 oz) of flour
- salt and ground pepper
