Recipe: Chicory Gratin with Blue Cheese
Step-by-step directions
1 Clean the chicory, cut into small pieces then cook in boiling salted water for about ten minutes. Drain well and set aside. Preheat your oven to 345°F (175°C).
2 Gently sauté the garlic and onion in the butter, add your chicory and stir.
3 In a bowl beat the eggs, crumbled blue cheese, salt and pepper, add the chicory and the cup of cream, stir everything together.
4 Fill your individual dishes and sprinkle grated Gruyère on top. Bake at 175° for 15 minutes (watch carefully).
