- 1.1 cups (25 cl) liquid cream (30%)
- 3 oz (85 g) of caster sugar
- 3 egg yolks
- 2.1 oz (60 g) of Cape Corsican citron jam*
- 3 oz (85 g) of hazelnut powder
- icing sugar
