Step-by-step directions
1 Wash the rice and place it in a strainer to drain for 30 minutes.
2 Cook the chestnuts in boiling water for a few minutes.
3 Peel them and cut them in half if they are large.
4 Put the rice, mirin, sake, salt and dashi in a pot. Mix them gently and place the drained chestnuts on the rice and cook.
5 Fill a bowl with rice and sprinkle with sesame to taste.

Classic Japanese recipe, you can toast the sesame before sprinkling it on top to get a little roasted hazelnut flavor.
