- 4 slices of light-colored veal liver
- 150 to 5.75 oz (160 g)
- (especially no trace of white veins)
- 4.25 oz (120 g) of garden raspberries (if you have them) clean and stemmed
- 0.7 oz (20 g) of salted butter plus a few drops of rapeseed oil
- 1.7 fl oz (5 cl) of good balsamic vinegar
