- 4 slices of very pale calf's liver
- 150 to 160 g (5.75 oz)
- (especially no trace of whitish blood vessels)
- 120 g (4.25 oz) of garden raspberries (if you have any) clean and hulled
- 20 g (0.7 oz) of half-salt butter + a few drops of rapeseed oil
- 5 cl (1.7 fl oz) of good balsamic vinegar
- a little ground pepper
